Blueberry Smoothie

Having moved to the US just a few short months ago, I was consumed by the amount of food choices that the restaurants, grocery stores and small delicatessens had to offer. Needless to say, I went on a little bit of a rampage, trading in my usually health conscious choices for the likes of cannolis, cupcakes and peanut butter cups. Certainly not the healthiest of choices. And while  it’s always fun to indulge in these foods, I definitely noticed the effects of not eating as I should. Feeling lethargic and constantly craving something sweet, I made the conscious decision to resort to my former ways very quickly. I’ve been hearing a lot about these low carb diets, and not being a believer in cutting out a food group, I always dismissed the idea. I felt, that there was no way that one person could be expected to permanently cut out a certain food, and that when they did introduce that food into their diet they would ultimately regain the weight. After reading a few articles, books and getting talking with people who had done more research on the topic, I decided to give it a try. I decided, however, that it was not realistic for me to assume that I could completely cut out certain carbs forever. After all, it’s always nice to have a treat now and then. But, for the most part, I have being eating low carb meals. I’ve replaced my breakfast cereal with a delicious fruit smoothie and have salads, meats and cooked veggies for other meals. It is truly amazing how quickly you can notice the effects of this lifestyle. For one, I’ve noticed an increase in energy,  I no longer feel as “heavy” as I used to and I feel fuller for longer.  In the support of healthier food choices, I’ve included a smoothie recipe for those who are looking for a healthier alternative to curb the sweet cravings.

Blend together:

  • 1/4 cup frozen blueberries
  • 1/2 cup almond milk
  • 1 tbsp Chia seeds (optional)
  • 1 tbsp honey 
  • 1 cup nonfat greek yogurt  (alternatively use a few blocks of ice)
  • 1/4 tsp ground cinnamon
  • 1/8 tsp pure vanilla extract
