Kale Chips

There are often times between meals when I look for something to snack on, but its difficult to find something that is relatively healthy and low in calories. I’ve walked up and down the aisles in the supermarket to find low calorie chips or health bars, but a lot of the time there are  ingredients in these items that add unwanted calories. While looking online for some inspiration, I stumbled upon this recipe from the FoodNetwork… Kale Chips. I recently made them for myself and really enjoyed them: it really is a good healthy alternative to chips, it has all the crunch with far less of the calories. Definitely worth a try:

Ingredients:

1 head kale, washed and thoroughly dried
2 tablespoons olive oil
Sea salt, for sprinkling
Directions
Preheat the oven to 275 degrees F.

Remove the ribs from the kale and cut into 1 1/2-inch pieces. Lay on a baking sheet and toss with the olive oil and salt. Bake until crisp, turning the leaves halfway through, about 20 minutes. Serve as finger food.

Blueberry Smoothie

Having moved to the US just a few short months ago, I was consumed by the amount of food choices that the restaurants, grocery stores and small delicatessens had to offer. Needless to say, I went on a little bit of a rampage, trading in my usually health conscious choices for the likes of cannolis, cupcakes and peanut butter cups. Certainly not the healthiest of choices. And while  it’s always fun to indulge in these foods, I definitely noticed the effects of not eating as I should. Feeling lethargic and constantly craving something sweet, I made the conscious decision to resort to my former ways very quickly. I’ve been hearing a lot about these low carb diets, and not being a believer in cutting out a food group, I always dismissed the idea. I felt, that there was no way that one person could be expected to permanently cut out a certain food, and that when they did introduce that food into their diet they would ultimately regain the weight. After reading a few articles, books and getting talking with people who had done more research on the topic, I decided to give it a try. I decided, however, that it was not realistic for me to assume that I could completely cut out certain carbs forever. After all, it’s always nice to have a treat now and then. But, for the most part, I have being eating low carb meals. I’ve replaced my breakfast cereal with a delicious fruit smoothie and have salads, meats and cooked veggies for other meals. It is truly amazing how quickly you can notice the effects of this lifestyle. For one, I’ve noticed an increase in energy,  I no longer feel as “heavy” as I used to and I feel fuller for longer.  In the support of healthier food choices, I’ve included a smoothie recipe for those who are looking for a healthier alternative to curb the sweet cravings.

Blend together:

  • 1/4 cup frozen blueberries
  • 1/2 cup almond milk
  • 1 tbsp Chia seeds (optional)
  • 1 tbsp honey 
  • 1 cup nonfat greek yogurt  (alternatively use a few blocks of ice)
  • 1/4 tsp ground cinnamon
  • 1/8 tsp pure vanilla extract

Winter Essentials: Boots

With Winter right around the corner, I’ve been on the lookout or a new pair of boots. For me, It’s about finding the right balance between affordability, functionality and fashion. I usually look for a pair that can be worn with both a casual and more formal outfit. Boots that are fashionable but not to detailed so that they can be worn with anything… Maybe this is too much to expect from a pair of boots. However, that being said, I have found a couple of boots that are definitely worth sharing:

Music To Get You Moving

With the colder weather setting in, it can be difficult to work up the motivation to get out and exercise. Sitting on the sofa, with a cup of hot chocolate in hand suddenly becomes a lot more tempting. The Ultimate Fashion Accessory

I will admit, I have a scarf addiction. There must be over 30 scarves in my closet, far more then any one person reasonably would need. But still, I find it tough to resist the urge to buy another one when I find one that I like. To me, a scarf is the perfect Fall/Winter accessory. It not only serves the practical function of keeping you warm, but it is an item that can quickly and easily dress up any outfit. With this in mind, I have put together a collection of my must-have scarves for the cold Weather ahead.

Keep up-to-date with TheSkimm

I recently came across a newspaper called TheSkimm. For those have already heard about TheSkimm, yes, I may be a little late to the game. But, for those that haven’t heard of it yet, it’s definitely worth checking out.  TheSkimm is a synopsis of the days current affairs, it offers it’s readers a snapshot of major events and news worthy stories in a one page newsletter which is delivered directly to your email at 6am on weekdays. It was started by two ladies who recognised that in today’s busy lives, people battle to find the time to catch up with events outside of work. They have fully dedicated their time to putting the paper together, it  is well written and insightful.
